Cornflake Chicken

 

Preheat your oven to 350°

Ingredients:
  • 4 skinless chicken breasts
  • 1-2 Tbs margarine or butter
  • 1-2 cups cornflakes
  • Seasonings of your choice (salt, pepper etc)
Directions:
  1. Crush your cornflakes in a ziploc bag with your favorite seasonings
  2. Melt butter or margarine and coat the chicken breasts in it.
  3. Roll the chicken in the cornflake mix
  4. Bake for 30 minutes in a casserole dish (45 minutes for bone in chicken)

Berry Gummy Snacks

I found this recipe on Pinterest and decided it needed a spot on my blog, it came from the website alldayidreamaboutfood.com Very easy to make and kids love them! What you need:  1 cup mixed berries   1/4 cup water   1/2 cup applesauce   1/2 cup fruit juice (apple, cranberry, blueberry, whatever)   2 envelopes gelatin (1 envelope = 2 1/2 tsp) Directions: In a small saucepan over medium heat, combine the berries and water. Bring to a boil and cook until berries are soft, about 5 minutes. Transfer to a blender or use an immersion blender to puree berries until smooth. Return to pot. Add applesauce and return to a boil, then remove from heat, cover and set aside. In a large bowl, sprinkle gelatin over fruit juice and let stand one minute.
